i did the ragusea orzo thing and hes right, you really can just throw whatever bullshit you want in there and its good. i should have put the tomatoes in after the mushrooms for a better texture, but theyre tomatoes, theyre tasty any way you eat them.

only orzo. most of the pastas i cook arent nearly as starchy as this unless theyre fresh pasta. even couscous tends to never make a starchy sauce, so i think its a combination of the surface area and the way that its cut that gives off a lot of starch while it cooks.

practice practice practice. years in kitchens accelerates this, but you can learn just fine at home. dont be afraid to make a mess, youve gotta clean your kitchen anyway, and wiping down your stove is already something youre going to do. biggest tip is that youve gotta commit and follow through; if you dont commit then nothing moves, and if you dont follow through itll go everywhere.
