The Mexicans I worked with ate disgusting food. Not once did I ever see a taco or burrito. Mostly it was pozole (spicy soup with goat meat, hominy, chickpeas, served with corn chips, cabbage, hot sauce, lime, pickled radish), tostadas with escabeche (disgusting pickled fish, vegetables, pig fat, etc.) or ceviche (like salsa with raw shrimp or fish in it) or else they would have some buckled ass torta (like a sub sandwich) or else they would just have rice and beans, grilled fish, and especially spicy chips coated in hot sauce and chamoy. All of it is very third worldy.

No, but it's different everywhere. Most Mexican food in the US is just texmex unless they specify in the signage. A few places in California specialize in sea food (mariscos) and claim "Estilo Nayarit." They don't use as many spices here on the south side of the border. Ground cumin isn't that common, for example.

Yes but its different in different locations. but Generally, at least 50 years ago, Mexican food was better in Mexico. Tex Mex is actually specific mexican cuisine from a dry desert state of Mexico. I kind of mentally took notes and can reproduce alot of the dishes I crave. Some of the dishes are equivalent to here in Texas tho from mexican restaurants. Others I just make at home.
