I'm sure there are lots of really good cheeses out there, but you must ask yourself if they actually melt properly. The whole point of the grilled cheese sandwich is to melt the cheese in between the slices of bread. Your super nice cheese might not melt very well, and is consequently useless in a grilled cheese sandwich.

Don't make Gordon Ramsay's mistake of thinking that mixing together a bunch of high quality ingredients means a better grilled cheese.

I always spread some ricotta on the inside along with sliced sharp cheddar. Plenty of butter on the outside, and sprinkle some chili flakes in the pan a minute or two before it's done.

Are you guys kidding? I've used all sorts of cheeses for grilled cheese and it all melts. Just don't cut huge, stupid chunks of cheese and it doesn't even need to be perfectly thin to melt. Not once have I burnt my tongue on the cheese either because it doesn't get boiling hot???

Cheddar and Craft Singles are not the same? Also eating "american cheese" isn't really that bad anyways. I was just saying you can cut any cheese thin enough to melt and if it needs to melt more then cutting it thinner works and using thinner slices of bread.
