I'm French and it's my lifelong duty to make fun of British cuisine, but I absolutely love and respect cheddar, it has a pleasant mild tingliness that no other cheese has, except perhaps aged gouda. I heavily suspect I will love Stilton too when I will get the opportunity to try it.
