I heard Chef JP was talking smack about onion powder in one of his recent vids. Well, this thread wherein we’ll serenade the stuff is dedicated to none other than him.

I like it in eggs when I don't feel like chopping an onion. It's also very useful if you're trying to do copycat McDonalds which seems to have a ton of onion powder in it.

For me the problem with onion powder and other powdered seasonings is lazy cookers rely on them to season whatever they cook which results in everything tasting the same. Usually they have a certain lineup of powdered seasonings they add to everything. I'm not against powdered seasoning in some applications but using them for every dish you cook is fatal cooker mistake.

onion powder is one of the cornerstones to any spice rack. I do agree though that one should have not just onion and garlic powder, but also onion and garlic granules. much more interesting to put into mashed potatoes and soups and meatballs and stuff

Onion powder is useless and tastes nothing like fresh onions. Onions are so cheap that there is no reason to ever use onion powder. Same with garlic powder. You are just a lazy cooklet.

My only gripe with onion powder is that it's rarely ever (possibly even never) fresh. If you want good onion powder, buy dried chopped/minced onion and run it through the blender into powder. Store bought onion powder tastes old and dusty In comparison.
That said, JP is probably under the assumption that onion powder is a substitute for fresh onion. Just as dried ginger isn't a substitute for fresh and paprika isn't a substitute for fresh peppers, onion powder is not a substitute for fresh onion
