Roast Mediterranean vegetables.
You put potato, onion, tomato, eggplant, and other vegetables like zucchini or fresh beans if you wish, lots of olive oil, garlic, herb like parsley or mint or basil, salt, pepper, and some water. Bake until the vegetables are tender and the olive oil and vegetable juices make a rich sauce on the bottom of the baking dish.

You can also cook the same dish on the stove top in a large deep pot.

For example if i want pulled pork ill roast a pork shoulder for 8 hrs and at the same time ill make a baked tomato sauce in a pot beside it for future dishes
If you want to be peak lazy learn to maximize your oven or stove while cooking to save yourself time

most stuff isn't really that hard to cook. if you can follow instructions, you can follow a recipe. better cooking will come with experience but outside of a few dishes that have very specific techniques, most foods are approachable.
sorry for being obtuse, I just don't like this question, because there's literally a million things that could fit your criteria. so you should ask yourself, what do actually want to eat? what foods do you like? what would you order at a restaurant? what kind of stuff did your family cook that you liked? what are your taste preferences? what cuisines are you interested in? and find recipes that way.
