Back in the bartending days, when people ordered a martini and didn’t specify a liquor, I’d always use gin. As that’s a fucking martini. 9/10 time they’d whine and say they’d wanted vodka. Ok then. You’re still paying for this drink, but next time please tell me you’re an idiot up front.

Three star barman here. Could say a lot about it. Customer is always right in matters of taste, order it how you want it. Most people order this drink because they want something dry, and menus are sugar and shite these days. Hence the popularity of vodka Martin's in counties people don't tend to drink hard liquor at all. Standard Martini, don't kill it with the lemon, it has to be ice cold so chilled glass, frozen vodka, i actually salt bath my vermouth because it lives in the fridge anyway. You if it's not cold enough the vodka is hard to drink, the citrus is too strong on the finish. Pairing? Basically don't put a herbal gin with a herbal vermouth. Nobody will specify the vermouth, it's not a drink you make with someone's favourite gin for that reason. Unless they ask. Matters of taste. So your bog standard tanwueray ten is probably the choice, it's citrus heavy, recognisable, good with white and dry. Monkey 47 is better, if you've got any, but i wouldn't use speciality gins.Substitute white wine, I rate it. You get much better white wines then vermouth, nobody has ever said a French 75 is a shit drink. If people have herbal gin and don't like it strong then a shot of white is totally valid. Because what is fortified wine? Wine with extra alcohol. And if vermouth is herbal well martini-bianco is the only vermouth anyone knows these days but there used to be hundreds of herbal wines. And this also avoids Pairing clashes with the herbal gins and let me tell you, herbal gins are far better today, an vermouth is far worse. Vodka Martini? Fine. Why do people order it? Either they struggle to drink straight vodka but don't like sugar shite, or they can't find a dry enough gin, or don't like juniper. All fine. Use a charcoal filtered vodka, herbal vermouth, don't kill it with the lemon.

Barman my friend, please three vodka in whiskey glass. Any time I can even get a vodka in a bar it's cause for general celebration. Usually it causes confusion, i get a shot of warm vodka in a plastic shot glass, or they think I'm going to do something with it other then drink it. Which is just embarrassing for everyone. Dry vodka Martini. Fine. I pay for cocktail
