the best mac uses processed cheese. I like to make my cheese sauce with a blend of mild cheddar, colby, and a generous amount american cheese, then just melt in milk with no flour or thickeners. it always comes out smooth, light, runny, and velvety just like cafeteria mac and cheese, can eat it just like that, or put it in a casserole dish and top with more cheese, then bake it to get some crust on it. I hate "gourmet" mac with a thick almost paste like mornay sauce with too many rich cheeses and breadcrumbs, I can only eat about 4 bites before I feel too full

I've had tons of hardened lumps of cheese because I eat box Mac and cheese like 3 times a week and buy it in bulk. Annie's is really bad for having lumps that are impossible to dissolve without a power tool.
