Weirdly, it's a complete protein and I don't understand how.If you want a more proteinous vegan food source, yuba/fuzhu/tofu skin is dehydrated so if you don't soak it to fuck and back, It will have more protein than tofu proper. Beef is 27g per 100g lean. Yuba is 50g. But because it can't be eaten dry, it needs to be soaked. If you don't let it absorb enough water to become soggy, it can have about as much protein as lean beef does.
