You don't need to use a bag for boiled eggs, duh. The idea with sous vide eggs is that you get consistency when preparing large batches. You can do 50 eggs if your pot is big enough and they will all come out the exact same.
Sous vide also lets you get a perfect boiled egg where the yolk is not chalky and dry. And before you say it, yes you can also do that with a pot on the stove and for one or two eggs it is the better idea.

Collagen breakdown is time/temp dependent. At 158 you could probably get away with 16 hours for sliceable meat, and then pulled pork tender at 18-24. If you go too long the meat gets mushy.

Cheap plastics and recycled plastics can leach bad things in your food. There was a semi recent finding that recycled black plastic utensils were leaching a toxic fire retardant into foods, and I tossed all the ones I owned and replaced them with wooden ladels and spoons.
