Why is it that any time you order something off of a Chinese menu, it'll be like 'blahblahblah CHICKEN' but when you get it 90% of it'll be some sliced carrots, green peppers, onions, celery and whatever else? Shouldn't it be 'blahblahblah VEGETABLE' (which is another item on the menu anyway) if that's the highlight? Why the fuck is everything some kind of vegetable stir fry and the only difference is the sauce and if it's noodles or rice?

As a demichink, I've always been confused by Americanized Chinese food for this exact reason.. You get beef noodles in HK and that's pretty much all you get: beef and noodles. Small bits of yu choy/gai lan here or there and green onions but otherwise, no other veg. You order beef noodles in America and you get beef and noodles and broccoli and carrot and snow peas and onion and mushrooms and peppers and so on and so forth.
I like Americanized Chinese food but it's very confusing that a culture which actively avoids veg would get restaurant food that has it injected into the dishes artificially like that.

I can make it at home but the sauces can be pretty work intense if you're making it from scratch. Real pain in the ass to do orange chicken for example. So sometimes you want to be lazy, which is why takeout exists in the first place.
