I had some beefstroganoff in the fridge and when I opened it, it reeked.I remember I ate it 3 days ago and it was completely fine, but today suddenly it seemed to have rotted.It was in the fridge the whole time, I am sure, how could have it gone bad so fast?

>>22187562Probably didn't put it in the fridge quickly enough and it sat on room temperature too long. 3-4 Days is already the max time for refrigerating dairy based dishes though. Just freeze leftover food you don't plan on eating in the next two day after making it.
bacteria in food doubles over intervals so it's worth is exponential. thats why food can be perfectly edible and then entirely rotten within hours depending on temperature and composition (salt, moisture, antibacterial preservatives).if you want leftovers to last a really long bring them up to a boil after they've sat around for like 5 days to kill off the bacteria. this won't last forever though as some bacteria produce heat stable toxins that won't be destroyed by repeatedly reheating.you can also just freeze stroganoff. you can basically make a ghetto vacuum seal on a snap seal bag by filling it then dunking it in water to push the air out of the top then sealing it.
Wait, I think I know why my beefstroganoff in the past used to last in the fridge so long.I usually put it at the bottom of the fridge way back, so it kinda freezes there, this time I kept it just in the middle so it didn't kinda freeze.

>>22188214I do it all the time. my family eats food at night and we leave the food out overnight in case someone gets hungry before bed or in the middle of the night. then we do dishes in the morning and out the leftovers away. I think the chili fermented because it was in a crock pot so it stayed quite warm for a while due to residual heat which basically induced fermentation.
Leftovers should always go in shallow containers no more than 2 inches deep. Too large a portion won't cool off fast enough
