Sauce thread. What are some you like and how do you use them. bonus points for home made sauces.

I make a hot vinegary relish for my grindahs>hot chilis >sweet capsicum>little garlic>sometimes some chopped tomato>salt & vinegar

mae ploy is goated. i like to make brussel sprouts with it.aggresively sear about 500g of quartered sprouts on high heat in a bit of neutral oil until heavily browned. remove from heat and add about a quarter cup of water, a tablespoon each of mae ploy, rice wine vinegar, and sambal oelek. give it a stir, place back on heat with a lid for a minute or two. remove the lid and increase heat to high until the sauce thickens again and serve with cilantro garnish. shits bangin as fuck.
