Do you guys think it's worth getting a mandolin for making cabbage salad and sauerkraut? I find it hard to cut thin and even with the knife, like the leaves sometimes shift against each other

Remove the ribs, stack the leafy parts, roll it into a tight cigar. The leaves can no longer shift. As for the ribs themselves, cut them more chunky, if you like, try to slice them just as thinly or shave them with a peeler.

One interesting option is to use a Vietnamese peeler/shredder tool. Far easier then trying to move the entire cabbage. There's also the Thai version which works a bit differently and the toothed grater.I would certainly use one or the other
