depends what you're baking. an oven is truly preheated when the walls of the oven come up to temperature and not just the air temperature of the oven. otherwise if you add a large cold dish it'll just rob all of the heat from the air. especially in a forced convection oven. I use an oven thermometer to confirm the temperature of my oven anyway since the internal mechanism lies and says it's up to temp when it's only 280 and I set it for 350.

Smoked pulled pork and my own honey BBQ sauce.

This took 9 hours, sure, but most of it vacuum sealed and frozen, and I have enough for 40 meals.
I would do it on a day off, but I work from home.
