Why? The squishy parts are gross. People only eat it rare because if you cook it all the way through the middle turns into shoe leather. The seared part is where all the taste and texture and flavor is. If the whole steak was made of sear it would be amazing.

developing a sear fundamentally requires moisture loss so all you'd be doing is boiling the steak from the inside. I'm sure you could do some Frankenstein shit like removing cores of meat and drying the interior then searing it with hot skewers but I don't think there would be a non insane way of internally searing a steak. it would also make the steak tougher since the point of leaving a steak particularly uncooked is to leave it more tender.
