Objectively this. Moved into a house with a glass top and was a switch from my gas GE Cafè 6-burner double oven which I loved. Thought I would hate and resent downgrading to the glass top but quite the opposite. Easy to clean, gets ripping hot very quickly, no fiddly valves, manifolds, or ports to keep clean. Only drawback is the clock and timer contols are very poorly designed.

Coils run off the exact same circuit design flat tops use because its 1900s tech. Just a bimetalic strip controlling the PWM signal going to the coil or flat top IR coil. Some of the newer flat tops have fancier circuits, but the real electric innovations were introduced with induction, where they FINALLY installed temp sensors and other active controls to help people out.

Gas is continuous cooking.
Electric is turning on and off.
Induction uses whatever fancy controller shit they shipped it with (assuming they didn't cuck you with PWM shit again).

I like induction too but it would be emperor if they could come up with more finely stepped power regulation on the low end, and get fucking rid of the annoying on/off pulsed power regulation on the lowest settings too.

Why cant we have an induction hob that lets me choose the number of different power settings and the actual power for each one with an app on my smartphone? Every fucking thing connects to my smart phone, why not an induction hob?

yeah...i spent close to a decade with gas and while i liked it, the new place i moved into has coils and i like it much better. takes longer to heat up sure but the temperature control is far superior, you can actually have things at a simmer without burning, and the whole pan gets an even heat vs. just where the flame is.
