Looks to me like you did the worst most lazy job seasoning them you could coupled with cooking them in the most lazy shitty way possible to boot. You could’ve lit a tiny bit of charcoal threw a few lumps of hardwood in too put the chicken on fucked off for a couple hours and had something delicious instead you have that slop. We all get what we deserve.

dont worry so much about overcooking thighs. They have a good amount of fat so they dont dry out unless you really overdo it. Set your oven to 400-425 f and let them roast for 45 minutes. You dont need to flip but it helps get some color on both sides

Here's how I do boneless skinless chicken thighs. 220C oven (430?), convection setting.
Some olive oil. Seasonings of choice. Garlic powder, smoked paprika and snp are must. Massage to get it everywhere.
7-8 minutes on each side. Take out. Switch to broiler, high. Put them back in, 3 minutes on each side. Done.

If you want you can now chop them to strips, toss to get all coated and broil for an additional 3m if you want to add them to burritos (should add cumin when seasoning if so) or a chicken gyro or something.

I just do it in the baking sheet that I'm gonna use anyways. Throw them on there, olive oil on, seasonings on, put on some gloves and massage to coat them

Should add, times are very oven dependent, get a thermometer to make sure, and once you have a feel for it you'll get the times for your own oven. Switch to broiler after they reach 75C.

And pan/sheet choice, you want something with a bit of depth as they can release some liquid, especially if you're doing a lot of them. If they release too much, you should drain some of it.

Oh and a final note, don't worry about overcooking thighs at all, they need to reach a good 85C to be delicious. So if you're feelycooking rather than using a thermometer, err on the side of more rather than less. Just don't burn em.
