In the OP pic, to me the dough looks a little on the dry side. I'm sure it turned out tasty but when I make focaccia the dough is not something I can hold in my hand without it oozing out. Poor choice of words, visually, but you get the gist. >>22191079 so yeah, for my money the crust is thick and all around it doesn't look as fluffy as I like it. More water and more proofing is my recommendation. You can bake at a lower temp as well and try the water bowl trick too some time.
But it looks good and if you like it who am I to talk shit. Enjoy

I'm also just now noticing the pooling oil. Maybe go easier on it and just drizzle it when you serve it if you must have so much. This can weigh down your dough as well and mess with the rising. Maybe that's the issue.
I was on to something when I saw >>22191079 and noticed that the crumb is shiny even if it otherwise looks dry. Picrel confirmed it.
Don't worry too much about kneading, focaccia can be mixed with a spoon and still turn out great

I tried to make bread for sandwiches last week but it always came out flat, but not intentionally like op's bread. it was rising fine when the dough was proofing, but after forming it into a roll shape it barely gained any height and only really expanded horizontally. it seemed like it was drying out on the surface and when I tried to score the top it deflated even more. I tried sprinkling water on the surface but it didn't seem to help. the insides looked normal though so I don't think the yeast died or was overproofed. what am I doing wrong? I'm attempting to make 82% hydration no kneading bread.
