Cooklet here. Are the Fallow chefs on youtube legit good? Would following their recipes make me actually better at cooking? Apparently there's so many fucking midwits on that platform teaching the wrong techniques I need to be discerning.

They are selling out harder with time to the algorithm and sales, shilling recipes that use their sold products more often. But the people they feature on the channel are clearly competent, without a doubt far far better than any anon here will ever be, and that alone will make people post in this thread pretending that they can't cook out of some weird bitterness.
All that being said, they format their videos decently enough to explain techniques, so they wouldn't be a bad source for learning if what they cook interests you.

I've recently watched some videos where it's specifically for "at home" with no special equipment needed. A "for instance" would be the sausage rolls. Yes, for a certain style of fine dining.

In general some of their tips and techniques will, yes, a lot is only going to give noticeable benefit at significant scale you shouldn't try making stock for 20 hours for example there's far better low hanging fruit to improve. Also recommendations like 'go ask your butcher for huge amounts of free bones and off-cuts' isn't practical in many places, often where traditional butchers exist they might sell you the stock made from the same instead.

They're really more like the youtube equivalent of watching old cooking shows that pretended to be cookery courses. You'll pick up little bits here and there but it's 80% entertainment of watching someone good at their craft and that's fine don't delude yourself into thinking it's real structured learning.

I've come to learn that cooking and medicine are two fields where the people who are really good at it do a lot of things because that's just the way it always is and don't question why. For the most basic stuff, yes. If you want to dig deeper just buy some old French cookbook like le guide culinaire. The recipes are extremely streamlined. They will tell you how to cook steak, roast or fowl and then give you myriads of recipes with it. Also old school sauce recipes are superior. No stupid shortcuts or random chemicals. You will need endless amounts of fonds though.
