Got picrel a few weeks ago, it is fun. Gives a lot of control over the brewing, never used a coffee maker that was as versatile. So far my favorite is putting the reducer in for the least amount of coffee with full amount of water, fairly fine grind and having the valve open just enough so it just trickles out, exceedingly good normal cup of coffee. Have yet to figure out how to make a good mokapot sort of coffee, but getting closer. It does surprisingly well at espresso once you get things dialed in, better than some of the espresso I have had from well regarded places with fancy and expensive espresso machines.

Cup pictured did not turn out so good, alright but I was trying to get a good picture (failed) and did not notice I had the valve open too far and forgot to turn the burner down to keep the element from cycling. Haven't used the steam wand much yet, not much for milk in my coffee, but it is nice to have for when the mood strikes.

Crema valve? If it is over-extracted you used too much water.

check out roasters that are local to your area
if that's still too expensive, buy the cheapest greens you can get your hands on and start stovetop roasting
>>
>>22202702
9oz is at least 14 cups of coffee so if you're trying to get a cup for under $1 you're gonna be stuck with lower quality beans.
you can absolutely find some freshly roasted beans at a local roaster for around $16 for 12oz. other than that just look for sales on independent roaster beans at the upper class grocery stores.
just dont ever buy anything without a marked roast date, ideally within the last 4 weeks.
and dont buy anything from colombia.
>>
>>22202706
>Crema valve?
Talking about the brikka
Also if I put in less water it tends to shoot coffee out violently, maybe the air was expanding too quickly. Anyway that almost certainly meant there was channeling.
I'm chasing that slow flow, moderate temperature output like I've always had with a moka pot but this thing isn't making it easy.

When I get in the mood to roast coffee I just do it in my skillet. You have to stand there and stir but that is not so big of a deal. No need to complicate things. I am glad I got into this stuff before the memes.
>>
>>22203979
i dont think my hardware store has any of that stuff....
>>
>>22204019
i have a whirlypop already but it can scorch, or bake, and it's recommended to use at least 1/2lb at a time. so i want to have the air popper too. that way, while I'm new and bad, i can stretch greens out between more batches and not have as much possibility of scorching or baking. it's nbd the air popper was only $7
>>
>>22204022
A cheap temperature probe would probably help a lot.
>>
>>22204039
i have a small instant read thermometer I'm going to use for the bottom of the pan. I'm just worried about hot spots since the whirlypop is thin aluminum.
i saw you can mod the pan by drilling a hole and sticking the probe inside so i might try to do something like that.
>>
>>22204022
>put beans in skillet
>turn on heat
>stir
>toss a few times to cool things down if temperature gets too high
Being able to hear and see the beans will help a great deal in learning. A wok is great for larger quantities.
>>22204053
Really glad I got into this before everything was on the internet. When I decided I wanted to learn to roast coffee I just walked in a local roaster and asked if there was someone I could talk about it. Spent a couple hours there and helped roast some beans, he answered all my questions, told me to just use a skillet, and gave me a few pounds of green beans to get started with.
>>
>>22204076
>A wok is great for larger quantities.
i asked about a wok last thread and (You) told me NO.
>When I decided I wanted to learn to roast coffee I just walked in a local roaster and asked if there was someone I could talk about it.
yeah that's why i come to the bean knowers at /ctg/
>>
man this chinese food really brings out the hot cocoa notes in this ethiopian
>>
>>22204096
Wok is nice because you don't have to worry about the heat much, just like cooking in a wok you just stir faster so beans spend less time in contact with the metal where the heat is, but I found skillet easier for less than a pound. As the anon alluded too, you probably don't want to use a well seasoned and heavily used high carbon wok, there will most likely be some flavor transfer. I used my room mates cheap non-stick wok.

I still prefer the skillet, you can see the beans better in stainless and I like watching them roast. It took some practice to get the skill down but not much and I don't need more single use gadgets cluttering up the kitchen. It is mostly about keeping the beans moving and easiest if there is more than a single layer of beans in the pan.

Buy a cheap heat gun, drill, and fan at harbor freight. Buy a cheap colander. Cut a hole in the top of your popper to fit the heat gun and a hole for the thermometer, attach the drill to the handle. Start the drill, cut heat gun on, roast, dump into colander placed over the fan to cool. If you don't want to hold a drill then just buy a planetary gear motor and a flexible shaft coupler. They are both pretty cheap.

can i store, rest coffee inside this mr. peanut jar or is that suboptimal? i would keep it in a dark cupboard. it seems somewhat airtight.
it is mr. peanut, which is why i ask.
>>
>>22204177
how exactly is this better than the air popper? both are just beans agitated in hot air.
I'm not opposed to doing it DIYing myselfing it but this seems like at least an extra $60 for something that is not exceptionally different from what I have.
>>
>>22204221
Well I was trying to help you improve what you already have for a few bucks rather than buying something else though I guess the biggest advantage is you can do up to a lb in a HGWP and will usually be doing multiple small batches in a popper and have to wait between roasts. Poppers also can vary a lot depending on your outlet and how long your extension cord is and are impacted more heavily by outside temp.
Frankly I wouldn't recommend poppers to anyone because they are a waste of money. Either you buy and it makes you hate roasting so you stop using it or you buy it and like it and very quickly want to get something better.
If you are on a budget and can't even get like a refurb SR800 + blemished ext tube then normally I would suggest a heat gun/bread machine if you want something cheap/easy or a heat gun/flour sifter if you have the tools to do a bit of DIY but since you already have a whirley pop its just cheaper and easier to mod it rather than buy the stuff for one of those.
>>
>>22204221
Also heat gun solves the problem of scorching on the bottom and with the drill or motor gives you a more even roast. You aren't going to be scorching or burning unless you push past 2nd crack.
>>
>>
kek
>>
>>22204234
>>22204238
i am open to heat gun tech, i just wanna try this stuff i have on hand first.
if i can manage the unmodded whirlypop without scorching or baking, and get better at conduction roasting in the process, that would be ideal.
but i also have been looking at the sr540 or the sr800 as an upgrade if and when i still want to do this after a couple months so i dont necessarily plan to stick with this equipment forever.
>>
>>22204260
That's fair enough. If you do decide to upgrade skip the SR540 and get the SR800. I would skip the newer SR900 too. Get the refurb SR800 and the blemished EXT tube (the EXT tube or Razz tube is pretty much essential) and use the money you saved to buy a Bounce Buster so you can hook up Artisan or Roastmaster.
>>
>>22204320
good to know. I'll keep an eye out for refurb as homeroastingsupplies doesnt have any in stock atm.
>buy a Bounce Buster so you can hook up Artisan or Roastmaster.
i dont really know what these softwares do but right now I'm thinking i probably dont want to go this high tech. the thought of hooking my computer up to roast coffee sounds unfun to me.. but maybe one day.

It is not an espresso maker, what do you expect? It does a better job than most things sold as espresso makers but are not espresso makers, especially things like the flair, which always disappoint me. Bellman makes something that reminds you a great deal of espresso but is not espresso. Sad thing is that it can't seem to do a good moka pot style coffee, I was really hoping for it to be exactly like a moka pot but with more control, it is very much its own thing.

The big problem with the flair style for me is the water cools off too much, I love that first too hot sip. Other than that I could probably get coffee I would be happy with from them with a little experimentation but never felt they justified the expense or counter space.

I have no idea which models I have used/had coffee from, I know a few people that have flairs or that other brand of the same style, have that sort of coffee a few times a month when visiting.

I got the one with the classic black plastic handle, feels solid. Not super heavy but it's not like I'm gonna be flinging it around. I have a KitchenAid semi auto machine and the original portafilter is definitely heavier but for the price this one will work for a long while.

I've never used a wood handle one but I'd be worried about it splitting or just getting kinda gross over time.

no not really. the popper roasts with hot air and the beans swirl. i use the knife to start the swirling process but the beans get lighter as they roast so after about 1.5 to 2 minutes they are fully swirling on their own.
there is also next to no risk of scorching or stalling in the popper since the air temp is constant and the beans are constantly in motion.

>thinks I don't know how an air popper works
If the air produced enough movement you would have ended up with an even roast but an air popper is not designed for even heat, it expects things to pop out into the bowl so those kernels in the center get closer to the heat.

Put your coffee in a skillet, turn heat on, steady slowish stir with a balloon whisk, when things get going start tossing, if heat drops too much go back to stirring. When done into a big bowl, toss to cool and separate the chaff.

Not that an uneven roast is bad, it can be quite good, it is just leaving things to luck. Just tell people it is a blend of light and medium roasts. You got me shipping for green beans, been years since I have roasted.
>>
this dude is very against air poppers

I'm not against them. Most everyone agrees they are not good and when someone buys a real roaster they go on and on about how great it is and how much better it is than their old popcorn popper. There is this idea that they are good to start with as a cheap entry, but most everyone already has the cheap entry in their kitchen and it will teach you more about coffee roasting and do a better job. It just seems silly to go through all that extra work.

Just because I prefer a skillet does not mean I have not used other methods, I've tried the popper and to get an even roast you either roast very little coffee at a time or stir the beans or shake the popper as that one anon said. Poppers work under the assumption that the kernels move up out of the heat once they hit the proper temp and pop which moves the beans from the center towards the heat.

Personally I would go with the oven if you want to avoid the steeper learning curve of a skillet, oven works pretty good but not very hands on, just listen for the crack and time.

Advocating for skillets is not a diatribe against poppers, don't think I even mentioned poppers until you started making assumptions about my experience and knowledge and only talked about them as a way to establish that. I never attacked "the validity" of poppers, just their being pushed the to point that people go out of their way to get one or try to use it to save money. They offer no real control over the process. If you mentioned that you were going to use a pan it must have been in the previous thread, I think it has been established I was not in that one, but maybe I missed it, either way I am just offering information for anyone reading, public forum and all.

I just watched the video on sweetmarias about roasting in a skillet, it kind of seems designed to make it look bad but it probably was exactly what it is presented as, off the cuff, but he does not really try and goes about things in less than ideal way, which he admits. But it reminded me I forgot to mention the preheat in my run down, I preheat in the oven. Whisk is the best to stir with that I found, I use a cheap whisk that has a fair amount of space between the wires for the beans to go through. Spoon works good in a wok.

Only question I had is for a coffee to add to my order of green beans.

second stovetop attempt with the same bean, but with a heavier bottomed, opem top pan, and whisk.
a lot of prominent scorching and very uneven. probably not even worth drinking this one. i likely used too big a pan and my thermometer is probably inadequate for reading the preheat temp.

>>22208777
i dont think they would be offended but they might think that selling you greens is less profit than selling roasted coffee. it might be worth emailing a few places.

What was your process for controlling the heat? Did you just dump in at preheat temp and go at it or change the heat during the process? How long was the preheat? What sort of stove? Pan was round sided so there were no corners the whisk could not get into?

If the pan was too big for the quantity you pretty much have to just toss constantly. As i said earlier, works best with a few layers of beans, if it pretty much a single layer the whisk just pushes them around no better than a spoon.
>>22208777
That is what I did for years and I got all my green coffee from a few small roasters. They were happy to help someone interested in roasting, generally would ask me to bring in some of my coffee and they would give me pointers. Made a few friends as well. Price was generally anywhere from a couple dollars cheaper than roasted to the same price as roasted.

I generally would also buy some roasted coffee at the same time, not so much out of worry of offending but because it was helpful to have some of the same beans roasted by a pro to be a control.

good idea
i will look into it
thanks again, anon

round pans. electric stove. preheated until 450 in the whirlypop and 350 in the heavy bottomed pan. the heavy bottom pan scorched more than the whirlypop anyway. preheated at medium high (7), then turned down one level (6) then after first crack down to 3 or 4. whirlypop used 8oz of beans so it was more layered.
anyway it took around 3x the time as the popper, considerably more manual effort, and i still didnt get as dark as i wanted (a main advantage of stove over popper), and the monetary loss from ruining the bean is more than the cost of the popper. so I'm still not really sold on the stove.

i have some smaller batches resting in these little jars with the lid just a little loose to allow CO2 to escape. is this okay or will they go stale before theyre fully rested? should i fully tighten the lid at some point?
>>
>>22208916
same thing as niggas who think cutting into a steaming loaf of bread fresh out of the oven is the move
it's not
>>
>>22208918
The oldfag way to do it is cut out the valves from bags and just use the ring to seal down your salvaged bags. Nowadays I'd probably just buy some silicone airlocks for fermenting and let them burp.
>>
>>22208918
you should fully tighten the lid so your beans get fizzy from the carbonization

i actually bought a pack of bags, the only thing is these batches are like 4 or 5 oz so i was worried theyd be too small for these bags meant for 8oz. would it still be preferable to use the bag over the jar even for the small batches?
I'm doing bigger batches from now on tho.
>>22208925
is that how you make coffee soda?

i think they're actually more like 10 or 12 oz bags

Medium high is on the high side, which is probably why you ended up dropping down to so much. Heavy pan is slow to react to changes and electric stove increases that, even moreso if it is a cooktop. With the thicker metal the outside is considerably hotter than the inside with a quick heatup at medium high, the slight turn down probably did not do much and the pan kept getting hotter for those next few minutes and then stayed hot. Turning down to 3 is not going to slow things down much with the combination of heavy pan and electric, need to remove from heat and toss to slow down.

But that is just a guess since you did not give any times, you certainly got up temp quickly and then overshot it with that medium high, but that is all I can say. Slow preheat, I did it in the oven at 375 while getting the bread ready to bake, so it would sit in the oven for a good 20 minutes while the oven temp was stabilizing for the baking. Pan comes out and put on a medium heat burner, coffee goes in pan, bread goes into oven and house smells amazing.
>>22208923
Some bread is best that way, kills the shelf life but that is not always an issue and some of those breads that are best fresh from the oven are not so great once cooled.
>>
>>22209120
>Turning down to 3 is not going to slow things down much with the combination of heavy pan and electric, need to remove from heat and toss to slow down.
i didnt turn to 3 to slow it down, i turned to 3 after first crack, which was several minutes after the scorch happened.
when i noticed scorching i removed the pan from the heat and tossed it until it calmed down. but at that point the batch is basically ruined anyway.
>you certainly got up temp quickly and then overshot it with that medium high
the preheat took at least 15 minutes
>>
>>22209120
name one loaf that's best sliced and served fresh out the oven
>>
>>22209125
15 minutes on medium-high to get a pan up 350? Well there is your problem, your stove sucks.
>>22209130
Most every bread cooked hot and fast, you either let that steam out quickly or it all goes into the crust and ruins it.
>>
last i checked, loaves weren't cooked hot and fast

I'm glad we finally agreed on the superiority of the popcorn popper

I store my beans exclusively in wide mouth mason jars and vacuum seal them with a manual brake bleeder pump and one of these foodsaver lid attachments. If you do this and store them if the freezer they last indefinitely. Exposing beans to oxygen will always make them go stale.

i would recommend this bean to roasting noobs because it was cheap but also had a very uniform bean size and shape and not many defects. i think i only noticed one. it swirls and roasts very uniformly and you can take it dark with no worries which is good if you accidentally over-roast.
>>
>>22209722
there's at least 2 defects just in this image anon

just sayin compared to the sumatra >>22208693 it was much more uniform with far fewer defects per square bean
