If you were given a fat stack of cash, on the condition that you use it to set up a food truck business, what would you cook?

I'd go for this:

>have a selection of my favourite stews
>ghormeh sabzi, beef chilli, carbonnade flamande, lamb karahi (can throw in occasional specials like ghoulash for halloween, chicken adobo, chicken fricasse, etc. rendang would be great but too much prep)
>do the prep day or two before, stews will obvs taste better come serving time
>only real work to do on the day would be to take care of the mash, fries, rice, bread you're serving with the stews

I think it'd be a hit in every season except for summer, when I don't reckon people are particularly in the mood for stews. And I'm not sure if druggies at festivals would be open to things that aren't simple and fried during their comedowns. But I think the other seasons would make up for it.

Why would anyone want to sell food? Have you ever seen anyone that worked at a restaurant that genuinely seemed to enjoy their job? Food truck operators have it even worse than regular kitchen staff since they have to listen to a generator drone on all day and work in a tiny, cramped environment in front of a hot stove, usually while it's 100 degrees outside since most outdoor events are in the summer, AND there's no AC, holy shit, this has gotta be one of the worst ways to make money.

They are incredibly decadent. A lot of the lamb fat soaks into the breadcrumbs and create this sorta sticky, gooey, lamby goodness. Kinda like a mix between a crumbed lamb chop and a lamb shank.

I would try to keep prices affordable by using catches that are unpopular or overlooked in NA and introduce people to new things. you gotta know your audience. there's a guy at my local home depot that did this. just hot dogs out the back of a minivan. he got so popular that they made a small addition to the store for him and now he sells hotdogs right next to the home depot exit, you have to walk next to him every time you leave the store. the hot dogs went from 4 to 8 dollar but at least he puts the spicy mustard

Szechuan pork dumplings. Someone did a pretty good recipe writeup on here maybe eight to ten years ago. Also, I used to go to a place that made god-tier ones for lunch.

The only problem is that I'd have to make a machine to wrap them. Doing them by hand is tedious and causes repetitive-stress injuries to the wrists and fingers.

If I couldn't do that, then maybe soups. Do a split pea, a chili, and some sort of clear broth soup, maybe a fourth that varies from day to day.

Gumbo Hut. Holy trinity, my personal seasoning blend, Kary's dry roux. Turkey and sausage in one batch, seafood (shrimp + lump crab meat thrown in near the end) in the other batch. I'd do weekend prep of the meat and freeze it so I could use my own stock cubes during the week. Served without rice, but jasmine or brown rice would be available for no extra charge. If I could swing it, I'd also do air fried cracklins and 'quacklins' (chicken cracklins).

I'd love to do a boudin truck but you need longer prep time and more space to do it at-site. Ideally I'd run the Gumbo Hut at some Scandinavian country that thinks fermented fish is a delicacy where it's cold most of the year.

I've considered doing this before. It would be called "Sloppa Joe's." There would be about 12 or so different kinds of sloppy joes on the menu, some easy to fry up sides (rings, fries, ect.) Maybe chilled sides if refrigeration isn't a big issue. Run the gamut of different flavor profiles for joes:

>Italian
>teriyaki
>Mexican
>bbq
>hawaiian
>bacon & cheese
>turkey
>vegan

There's a few others. Would be cute, but probably wouldn't last long with beef prices the way they are.

Basically it would be a Truck Sloppa, and I'd serve Shepard's pie, Chicken pot pie, and Chili mac. Basically all-in-one type food that covers meat veg and starch, and would be thicc. Serve via plastic bowl with lid and little silverware packets.

Like i said if i keep production costs low and sell by volume, i don't figure i need to worry too much past that and being reliable and affordable will win people over. Me personally if there was a local food truck that was decent quality but cheap enough i would buy from them every time i could because it's just a few bucks rather than restaurant prices for food you eat on the sidewalk.

What makes or breaks it as a business is how many gigs you can line up, if you want to run some speciality food you might do well when you're trading but you won't get enough gigs to make it work unless you're in some urban 24h fixed liscence spot where the van itself is just a tax dodge. The other thing is that you have to pay for the van itself, so you don't want to set the van up as a single user kitchen.

So what do you sell? Coffee and press, rear window. You need a heap of space for stock but very little prep space, then you sell coffee and biscuits. Not very interesting but your breakfast window is very, very short and half your customers will be shift workers because half your slots will be shift slots.

Lunch and night you've got two benches and if you've got rid of your milk and bread by lunch you've got your stow back.

Last spot is actually grocery dump where you just resell whatever you've got left at cost, as a lot of shit isn't worth fridging.
