It’s crawfish season. Anyone indulge in crawfish?

When I was little we used catch them with our hands and cook them up along with what ever else we found to eat so we would not have to go home to eat lunch. Usually would have them with hazelnuts and apples, sometimes lobster mushrooms but those were kind of a pain to deal with our limited in the woods cooking setup, but they are plentiful and easy to find at this time of year.

Freshwater Crayfish aren't a big thing in Britain, we didn't many anyhow.

But someone introduced American Crayfish, which carries a disease and kills ours, they are classed as an invasive species and damage the riverbanks.
River authorities do trap the American ones but they can't be sold live (incase they get released into other rivers) so they are sold cooked, mainly to places like Sweden.

I used to love getting a few pounds of crawfish and a pitcher of beer when I lived in East Texas. Now I'm 2000 miles away from crawfish country so all I can get are frozen crawfish tails which just aren't the same
