There is no specific recipe for "authentic" burritos. Hell, until recently, "taco" and "burrito" were regional terms for what is near universally just called a taco and there's been regional variations on the dish for as long as it's existed.
The Pueblo peoples of Southern California have about as much of a claim to the modern burrito as Mexicans do.

I'm pretty meh with flour tortillas or wraps, but corn masa tortillas are fucking wonderful.
The simplicity of onions, cilantro, and lime really is an epitome of good veggies. Lettuce and cheap store tomatoes are lazy veggies. Cucumber and yogurt is a divine combination though. Parsley and dill are optional but add too the flavor profile. Lime w/ veggies > pickled veggies.
For meat and their flavor profiles, Mexican > Mediterranean/Levantine/Pakistani. As for why, I think maybe it's the chilies. So much great flavor in them.
Chili sauces, avocado, and sour cream are great, but Euros win on the sauces (tahini, yogurt, pepper, and garlic based sauces). It's really a close call here.

The real winner though is doing wtv the fuck you want. Take a flatbread, fill it with meat and veggies with acidity, combine with wtv sauces and toppings, and enjoy. I made some falafels recently and ran out of pita, so I'm eating them with corn tortillas and it's fucking great.
