What have you guys been improving on?
My cheese sauce turned out way better this time. I needed more pasta water than I thought I did last time. At first I thought I accidentally made cheese soup then it suddenly came together nicely

yeah I used to make it dry as fuck but now I do it like, not quite a cheese soup, but almost. Also if you ever have some jalapeño queso dip it is a good addition for sure.

I learned making cheese spätzle (egg noodles) from my mom. Most recipes call for a cheese sauce to be mixed with them, but she makes a sort of casserole. They were pretty damn good, but she is allergic to spices for some reason and I forgot during the process. They need pepper and nutmeg, I will try again next weekend.

once a week I make grilled cheeses/melts so mostly getting the cheese to melt without burning the bread only issue is I'm frugal so I only get marked down bread so it's often switching between rye/organic oats/whole wheat stuff like that.

I'm on a strict near zero fat diet because my body is trying to kill me, and will continue trying to kill me until surgery in a couple months, so I have had to figure out how to cook without any oil. At first I started with a brand new teflon pan but that was shot within 6 months as the top coating they put on to make it extra slippy is what i needed for things like rice/potatoes/frozen veg. The actual teflon layer isn't non-stock enough to handle this dry after the factory slippy slide coating is worn. Eventually I settled on making everything a stew or soup instead of a stir fry. I've also become very quick at separating egg whites as all the fat in eggs is in the yolk.

Yes. It's laparoscopic gallbladder removal. Short recovery 2-4 weeks. Just have to hold out till then. Oil and butter will return and i can stop subjecting my pans to this cruel abuse.
