I went on a distillery tour at a local place the other day, and they let me try some of their new make spirit. It was genuinely some of the best grain-based spirit I've ever had, and they don't even sell it. Why the hell aren't unaged (technically not) whiskeys a thing? Is it really just because of those laws the UK had that mandated minimum aging times that don't even apply to the US? Basically every other type of spirit understands that their stuff can taste fantastic unaged (see: tequila, rum, etc) and whiskey specifically has a bunch of really interesting aspects to it at the front that you just never taste because they're covered up by oak.I remember wondering this a while ago before I'd even tried it myself and all the answers that I saw online were like "yeah you don't see it because it'd taste awful" and those redditors were absolutely fucking lying.

Gin doesn’t count because it’s adulterated The thing is, you can probably make new make good but at that point it would be expensive. You’d had to do really narrow cuts at the very heart of the distillate. Which is a waste to use for new make
>>22223978To be fair almost every thing is better with wood. And to be fair white rums, white piscos, and white whiskies are also still good. I’ve tried both unaged and aged versions from the dame distillery (middle west pumpernickel) and preferred the latter.It would be nice if white dog were more common but you’re probably right about the cuts being prohibitive. But that doesn’t stop the producers of white rum etc
>>22223978I mean maybe the new make that gets sold is bad, but this stuff was fantastic. It was 100% barley american single malt stuff, if that matters. Also I disagree that tequila is the only one that works, unaged pot still rums and agricoles/cachasa are delicious. Plus I'd kinda argue that the whole reason Pisco is successful as a segment is because they exploited this same blindspot when it was the brandy industry making the same mistake.
I'll finally admit it. Antique 107 is very good and crushable.
