So I got one of these. Now how do I cook it?

Specifically, I wanna make a pile of pulled pork that I can throw into quesadillas whenever I want some. I'm figuring on tearing it apart and throwing it into ziploc bags and freezing them.

Google says 275F for 6-8 hours, but won't it get dried out? Is six hours already too long?

Should I wrap it in foil? Would the acidity of the pepper marinade dissolve the aluminum if I did that?

If I cook it for a shorter time at a higher temperature would that keep it moist?

No, pork butt is a fatty cut of meat. Just put the fat layer on top and it will baste itself as it cooks.

That will ruin it and actually make it dry out. Cook a pork butt low and slow to maximize tenderness.

I put it in the oven an hour ago at 285F but I just realized I didn't add any water to the baking dish -- it's a fake-pyrex glass dish. Can I add boiling water to it and not shatter it? It's probably a 90F differential considering taking the water off the stove before adding it.

I wrapped the whole thing tightly in foil so it won't dry out as much as if it were open, but it'll still dry out.

So it turns out I didn't need to worry about watering it. When I pulled the pan out of the oven, it was full nearly to the brim with oil and water. Some of it slopped out onto the bottom of the oven, and I'll have to clean that today.

IDK if the pork would have been any better if more hydrated. Whatever mix Swift smeared it with, it's so salty that it's more like a ham than a pork roast. Overall I think these things are overrated and that it's better to buy a plain pork roast and then season it with whatever you want.
