>>22222295Yeah, you slice in the direction of the white lines. Follow them as best you can and it will be perfect. For some cuts like that one it's not as skewed in one direction so you're right to have some confusion there, but whenever you can, cut along the white lines just like you said.

By severing the fibers, the resulting chunk/slice of meat is now a bundle of many short fibers, as opposed to if you cut the opposite way, you'd have fewer long fibers. This makes the meat come apart more easily when you chew it because you don't have to sever the fibers as much with your teeth.
