What kind of Chips do you enjoy? It's weird how many types of Chip there are and how they taste so different even though it's the exact same thing and not much can really be done differently.
I always respect and go for the classic Chop shop Chip, but I really love the Translucent Chip. They're just divine

Maybe you can help answer this. There's a place in NYC that offers what purports to be a "bacon butty with English chips". I'm told these are not, in fact, representative of "English chips" (and that a butty is a bun, never grilled bread).

What are the differences?
>>
>>22222045
What do you mean?
>>
>>22222048
Ah this is a result of globalisation because of social media. I didn't know it affected you guys too. It's like how everyone here has seen videos of real food from the "hood" in Philadelphia and Philly cheese steaks are the in thing to go mad over and pine for. Company pick up on these things and create them because they know they'll be a hit. So we have these fake cheese steaks things pop up so people feel like they're experiencing it. As long as a product has the same ingredients more or less and resembles the trendy dish it will sell.
It seems like your place didn't even care to attempt a butty, that's just a sandwich. And if you hadn't guessed already no it's not authentic. Not a single thing. Yes it should be a bun that's sliced partially and stuffed.
That was a long winded explanation.
Hope you weren't just winding me up and genuinely wanted to know
>>
Oh and it's never ever toasted

Did you make the Translucent Chips?
>>
>>22222272
no problem bro :) I posted it on two boards, did you get it from /brit/ ?

Earlier this year I made triple cooked chips like they do in the UK as per Bluementhol's recipe. It's a bit of a hassle but they are good.
>>
I prefer salt and vinegar Lays potato chips.
>>
>>22222274
yes, blanched, frozen then fried once, the variety of potato is very important, those are potatoes bought in Greece but come from Egypt

the ones from my local store wont look like that i I do the same thing

Fries of that shape can very good if they're cooked properly to make them really crispy on the outside and fluffy in the middle. There are other fries I enjoy too but those are my favorite when they're done right. Crinkle cut fries can be great too when they're actually made crispy, thought I often see them done incorrectly.
Fries.
>>
>>22222278
Those chips look so good. Twice fried chips are my favorite (love that crispy yet tender crunch)
>>
File: potatosize.png (10 KB, 1914x940)

Top 3 I've had, in a particular order.
chick fil a waffle fries (all other waffle fries suck), they're bendy and delicious. steak cut fries from a steakhouse, they're meaty and I like to use a fork to cut it in half. KFC used to have wedges, from small to large each one was very soft in the middle but not overcooked in any way.
Potatoes in other ways are good too, I like "hash browns" that are shaped like pic related of fried potato, but most hash browns are shaved potato or a misshapen tater tot. don't know what to call this shape or cut, like an obelisk
>>
>>22222278
you can par cook and dry a huge batch of fries and just keep them in the freezer in a freezer bag. you can also get 90% of the way there by just letting them steam dry and then roughing the edges with the colander fluffing method. I think hestons method was kind of performative in its length for how many shortcuts you can take to get pretty much the same product. hell you could probably just dry the potatoes out in an air fryer on low heat for 10 minutes instead of putting them in the fridge for hours.
>>
>>22222929
The leech of the milk and eggs and butter dry the potat
>>
>>22222929
>you can par cook and dry a huge batch of fries and just keep them in the freezer in a freezer bag
Yeah that's what I did, I think there is still a portion in my freezer from that time.

>you can also get 90% of the way there by just letting them steam dry and then roughing the edges with the colander fluffing method
Yeah I think even once fried is enough but there's a method I've seen where you put em in the microwave but haven't tried it.

Tbh the only time I eat fries is when I make a burger myself at home which is 3-4 times a year so that's why I don't mind doing all the preparation.
>>
>>22222953
I vaguely recall the microwave method but it's exact instructions elude me

>>

np bro, if I try it I'll do a thread, but I'll probably try it with fresh potatoes just to see if it works.
>>
>>22222037

Hahah yes I did, you're the German on /int/. So they're the Heston Chips, from the second photo I can tell, and by the looks of it you got it you did well, they look amazing. I've always wanted to do them. Your wife will be lucky. Do you remember the name of the Potato? I assumed a Maria Piper would do the job. So you bought them in Greece and brought them all the way back with you?
>>
>>22222953
I never eat fries. I can't afford them. Maybe in this case it's a pro
>>
>>22223166
>you're the German on /int/
Bulgarian
>Do you remember the name of the Potato?
Nah there's no names here unless they are local and it's the name of the region no the type of potato, I just know they are imported from Egypt.
>So you bought them in Greece and brought them all the way back with you?
From Greece to Bulgaria.
>>
>>22223058

>>
>>22222045

>>

I remembered wrongly. You're Bulgarian, it makes sense that you got them from Greece. I was imagining a German taking Potatoes all the way back home with him, I thought you must be SOME food enthusiast haha (to be fair I'm mad enough to do something like that).
So if they aren't a specific variety you can tell by the name how did you know they were perfect for Heston Chips?
And what do you have to say about Bulgarian food? Sadly I didn't think much of it

>>22223272
>So if they aren't a specific variety you can tell by the name how did you know they were perfect for Heston Chips?
I just buy the from the same store and the same guy everytime, he has two types of potatoes and this is one of them, he told me they are from Egypt.
>And what do you have to say about Bulgarian food?
It's ok, it's just Turkish food but with pork instead of beef.
>Sadly I didn't think much of it
What did you have?
>>
>>22223611
I know right it's a joke. They used to be reasonable in London until they discovered people will pay anything as long as you increase the prices. Wen from £1 some places even less, to very minimum £3.50 to £5
>>
>>22223611
We're going to have to talk about Chips again haha, I had kebab a few times (because other options in around me in Sofia didnt look the best) and every place would make the chips in one big batch all at once. Leave them in a soggy cold pile and serve them as people came in throughout the day. First time in my life I had ever seen such a thing. I don't know how anyone could not be embarrassed to do things that carelessly. That told me they don't care about food from the start. I tried some bland chicken stew and an overcooked batter chicken breast too, no idea why I even chose that. Neither were good. After that I gave up.

You didn't make pic related chips did you anon?

Chips chips chips
>>
The outer layer of an FRENCH FRY ought be crisp. A soft outer layer, the by far more common preparation, is sub optimal.
>>
>>22223622
>to very minimum £3.50 to £5
WTF?! This is insane. When I was in Greece they would have 0.60/70 cent/kg potatoes even.

>>22223632
>I had kebab a few times
When you say Kebab do you mean from the middle eastern guys? I wouldn't consider that Bulgarian food desu.

>You didn't make pic related chips did you anon?
Yes I did.

> I tried some bland chicken stew and an overcooked batter chicken breast too, no idea why I even chose that. Neither were good. After that I gave up.
Seems like you didn't go to the right place. I should have had moussaka or something like pork with fermented cabbage, or some bbq kofta and kebapche (not to be confused with kebab), sausages - we have great sausages.

We have good beef/pork stews ect.

I definitely didn't go to the right places, but just the fact it's so easy to end up in such low quality restaurants didn't leave me with a good impression, shouldn't even be possible. I needed a good lad by my side like you (no homo), you'd never steer me wrong. The kebab guys looked Bulgarian but I guess it's not your cuisine anyway

I wasn't talking about the price of raw potatoes by the way.

Wow you made those too, they like like really good American fries, they aren't easy to do. Not that I did my homework and tried hard but I could never get that kind of finish whenever I attempted them when I was younger
>>
>>22223675
If you don't know where to go it's easy to get fooled and go to a place that's just run of the mil average slop.
>I wasn't talking about the price of raw potatoes by the way.
Oh well yeah that I get but still 5 pounds is alot. I've never bought those, these that I make and blanche and freeze and treat are for special occasions, usually I just fry them.

>Wow you made those too, they like like really good American fries
Yeah, I put vinegar and bicarb soda while I blanch em, but it only works with really good low sugar high starch potatoes that don't get brown when frying. If I buy bulgarian potatoes I never know what I'll get, sometimes they are good, sometimes they are shit. Those egyptian potatoes no matter how much you fry them they still remain bright yellow.

>The kebab guys looked Bulgarian but I guess it's not your cuisine anyway
I never eat from those places because it looks very low quality and nobody gives a shit.

British style chips almost makes me forgive you guys for the whole invading our homeland and trying to murder us thing, but then getting mel gibsoned in "The Patriot"'d.

So, for me, it's in no specific order, potato wedges, british style chips, waffle fries, and the humble burger/hotdog joint crinkle fries.

>potato wedges
Best enjoyed with a hot jalapeno cheese sauce, ala fudd ruckers
>british style chips, waffle fries, crinkle cut fries
Gettin dipped in heinz ketchup with hot sauce and fresh black pepper

Man, you know what you're doing. When I get my own place and have the will to cook again I'll try your methods out. Crazy how technical and skilled making good Chips even though it's such a simple thing. Way less goes into making a meal that someone would call "better", like a stew. Something you can effortlessly whip up if you know how to cook well, and even if you don't follow it completely correctly it'll still be very forgiving
>>
>>22223759
Wedges!? You are not a Chip connoisseur. And you have the cheek to put them over English style. I don't even class them as Chips, they're like a roast potato done badly

Butty means a simple and cheap sandwich in a white bread roll in my neck of the woods, generally either bacon or chips. British style would refer to fish and chip shop style chips like pic related if I had to guess. The good ones are fried in beef tallow then drowned in mskt vinegar or non brewed condiment.
>>
>>22224377

Those are proper Chips shop Chips, never pretty but the taste is all you want in life. I remember moving to a new area and trying to find a Fish and Chip shot, was happy I finally came across one. When I opened the bag I noticed they were quite brown, tasted them and they were so sweet but very bland, the texture wasn't that great either. It was obviously he didn't use an appropriate variety of Potato. He was a middle aged geezer and said he'd been open long time, so I assumed he was the real deal.
How the hell can someone who devoted their whole life to something get something so basic wrong? How clueless must you be. I don't know how he stays open

I have a really good one, probably the best one on London, just 10 minutes away from that one but, it's quite inconspicuous so I had no idea it was there for ages. Other than that there's absolutely nothing for miles and miles and even then they'll probably be atrocious, so I'm so very grateful, how lucky am I.
They're Chinese, but hear me out. This isn't the usual nasty immigrant take over, there's a whole beautiful history behind it. These people from Hong Kong were welcomed here in the 70's to do great work. They discovered the live of Fish'N'chips and perfected it. They created shops that honoured ours with the same decoration and traditions. It started in Liverpool and spread throughout the county so a lot of the best ones are Chinese

Crinkle can be very good when they're actually cooked to crispness. Most places just don't fucking bother for some reason and when they're not crispy they're fucking ass. Steak n shake does crinkle cut now alongside the shoestring and they are way fucking better.

Not really most of the world calls a "chicken sandwich" a chicken burger. Most of the world calls a "grill" / "cookout" a barbecue. i would say personally that i don't think it HAS to be in a bread roll to be a butty. it can be in regular white bread, and a butty usually contains either bacon, sausage, or chips. and to agree with the others, English chips would undoubtably be chip shop style chips, which are very thick and fluffy (or stodgy) and cooked in oil or beef tallow. it should also be noted that a butty almost always has either ketchup or HP sauce in it
