Same. Really good as a stock/broth veg, too. Do this:

Shave it into ribbons with a peeler.
Stack and cut the ribbons into 1cm/half inch lengths.
Put it in the fridge and…
… just wait. That's it. Let it freeze dry in the refrigerator over time and there you go. Pour boiling water over it and a mix of other dehydrated root veg (carrot, parsley root, celery root, sweet radish/cabbage cores etc) and let it steep and there you have it: veg stock/broth.
You can squeeze and eat the rehydrated veg or just leave it in and eat the lot as a soup or toss it if you really want.

They have this weird gotcha in that the core is harer and needs more cooking time than the outer part. You should slice them through the core to mitigate this when boiling or oven roasting them.
They are great as deep fried chips or pureed.

A lot of forgotten vegetables are forgotten because of economic reasons of industrial production, but I cannot find a justification for parsnips beyond that it takes a bit longer to grow than carrots.
