I don't know if it's my favourite but I've been making broccolini and italian sausage pasta and it's top 3 at least. Your carbonara looks like it's split. Maybe you should do it in a bain-marie next time.

Make a sabayon base from the fat of guanciale, cheese and eggs in a bain-marie and then just finish the pasta in that and it's creamy and doesn't split

My favorite pasta dish doesn't have a name, but this is how you do it:

Boil the pasta until al dente, drain it. Put it in a bowl and add some really good olive oil, some really good parmesan cheese, a little fresh marjoram and some red pepper flakes. Mix and eat.

pesto pasta reporting in
i cannot stand seafood in pasta. the saucy noodles seem to overwhelm whatever flavor it has so all you taste is the salty rubbery texture. its like rich people thought "hm how do we make pasta more decadent and a status symbol oh lets add mussels and scallops those are expensive" and it just doesn't really work.

It doesn't have a name, but the sauce is basically cacio e pepe and then I add dollops of white miso and peanut butter while mixing with the pasta.
The other ingredients are chicken, mushroom, corn, and scallions.
Its like crack to me. I love it.

Yours looks like it has just a bit too little egg and a bit too much oil/fat

Absolute favorite is lasagna, though it's a lot more time and effort to make, but still like making one once in a while.

Sleepy mistake on Saturday afternoon.
I had used the miso and peanut butter for a stir fry dinner the night before, and I guess it was still on the brain. I made regular cacio e pepe for lunch, but then my brain derped and I mindlessly got out the miso and peanut butter as well.
Turned out great, though. Got me to start messing around with these flavours more. Another mix I'm fond of is a carbonara sauce but with uni paste in the mix.
