Injera is the reason I can't like Ethiopian food. If they served their food over rice or with a non-sour flat bread I would like it. I just don't like injera. I don't particularly like San Francisco sourdough bread either.

This is common problem at restaurants and with families when you buy the injera in larger quantity. here they sell in shops a stack of fifty 18" round full teff fresh third day it will "get ripe" easy way to avoid going bad is to parchment paper a few at a time and freeze for later use. mom taught me that.. no sour injera. the further into fermentation the more it will gas you up and you get the Brraaaapp..

I had the (not sure the proper name) red chili lentils for breakfast. You definitely notice the sourness of the bread a bit less when it's paired with rich, spicy, oily stews - then it becomes a foil. I see why I haven't eaten this in years, it made much more sense when I was drinking regularly. It really does feel like I am transported to africa when I eat it though, like I can sense the famine and desperation through the food.
