The Viet place I used to go to in Taiwan had an absolutely fantastic salad, chicken and cabbage with a mildly spicy sauce. Lan Phuong on the north coast, IIRC it's around 3 miles west of Shimen (the actual rock arch itself by the beach, not the town/district).

I had pic related when I was last in Saigon. Was down some alley in Binh Thanh that a bartender had told me about when we were talking about food. Basically just a family shophouse making most of them for takeaway. Very tasty.

I tried pho several times when I had to spend several months in Vietnam and it was really bland. Every other Vietnamese noodle dish including bun fucking mam was better, to say nothing of stuff like bun cha, mi quang and banh canh cua.
And obviously it doesn't hold up in a comparison to most types of ramen (other than assari soy sauce styles like kitakata which are comparably bland).

i lived with a first generation Vietnamese family for 6 years all the asian cultures are kinda mixed in. they share food and tv once they are in the usa even a lot of music too. i dont know how the older people felt because i dont know viet and they dont know english but the parents that learned english absorbed other asian cultures into their own very easily here in america. like i remember visiting friends of theirs chinese restaurants once and we shopped more at the chinese market than the viet one. maybe the non english ones are more strict viet only kind of stuff but i dont know they cant say anything haha. its also common for restraunts to have thai and viet and chinese things all on the same menu. like a viet family owned place will still have pad thai and mapo tofu a lot of the time here.
