i'm trying to get over my autistic hangups about vegetables (i haaaaaaate the textures, yes it's literal clinical autism) and actually fucking eat them more often. what are some good starter vegetables not counting potato, sweet potato, and corn?

Broccoli is commonly available and can be cooked to a variety of different textures depending on what is most palatable to your needs.

If texture is the problem then reach for extremes. If you don't like crunch then focus on vegetables in soup, vegetable beef soup with carrots, potatoes, green beans, peas, and onions should all be pretty similar texture by the time it's cooked and the flavor is amenable to autism. Chicken pot pie is another great choice.

If it's mushy you hate then roast or steam lightly, broccoli florets are great roasted at a high temp with some salt and oil for 10ish minutes, or steamed for like 1-2 minutes, just long enough that it still has a little crispness. Fuck all those recipes that say to steam them for 8-10 minutes those are ass. You can even eat broccoli raw if that's the texture you want. Also you don't want frozen vegetables for this, you need fresh if you don't like mush.

my first suggestion would be make vegetable soup. if you cant handle veggies boiled nearly into a mush then you might as well do as other anons say and blend them into drinks

these can be good raw, slightly cooked, or soft.

dice these very fine. there are a bunch of tutorials out there on how to do it, but at the end of the day you can still just chop them up very methodically smaller and smaller until you get tiny pieces. throw these into sauces, or soups, or salsa where they'd get lost in the other textures.

try to work like 1/4 of an onion into a meal at a time, and wrap the rest in a paper towel and ziploc it in your fridge.

when cooked properly, they're kinda like a noodle in vegetable form. you just gotta slice them vaguely into strips, season them with salt and pepper, use a decent bit of butter, and let them cook on low in a covered pan for like 10 minutes.

do 1/4 of a cabbage per meal, like the onion. you can even add the onion to the cabbage.


ez-mode:
chop up a carrot, 2 sticks of celery, and half an onion very fine, butter your pan, and slowly cook the mixture over low heat for ~15 minutes, give or take. it will be sweet and easy to enjoy.

make sure to wash all your veg, you don't know where it's been along its journey from farm, to supermarket, to table.

don't wash your whole head of cabbage either, just run some water over the portion you've chopped up in a big bowl and then pour off the water, or use a colander

What textures don’t you like? Is it raw crunchy, rubbery (like cooked broccoli stems), or slimy (like cooked bell pepper)?

In terms of taste green beans and squash tend to have mild tastes and are easy to cook. Cooked carrots with butter are pretty good
