Tonburi is Japanese Land Caviar. The polished seeds of the summer cypress plant. A delicacy which can elevate a dish to the next level.

Tofu Misozuke is tofu fermented with a miso paste. A few days and still have some tofu flavor or go a couple weeks and make a tofu cheese. Goes well with Tonburi.

Huitlacoche is also known as Corn Smut. It is an edible fungus which grows on corn only during certain seasons. It tastes like mushrooms and is often added to quesadillas.

Squash Blossoms are the edible flowers of the squash plant. Can stuff them with interesting ingredients. Can fry them for an unusual addition to appetizers or entrees.

Edible flowers are really interesting to me, I’ve had squash flowers and some edible rose. I wish they were more common but I understand why not

None of these are unusual. I'd say cooking with feces or rotten meat is unusual. These are just regional foods. Regional does not mean unusual.

I wouldn't say cooking with feces or rotten meat is unusual. That's just disgusting. Nobody cooks with shit or rotten meat because it's gross and unsanitary, not because of some other reason. Eating flowers is unusual because it's not a typical ingredient in most cultures. I'd be willing to bet even in the regions where people do eat them it is considered an uncommon dish.

Unusual in that context would be relative and therefore a worthless concept for an imageboard with posters from many different countries. Even just within the continental united states food cultural norms can change on a county level. As well as the drastic shift in food culture between rural areas and urban areas. Foraging and plant identification are normal in rural areas but I imagine it'd be strange for someone in a city to pick a flower or mushroom and eat it. But I wouldnt exactly call mushrooms or edible common plants unusual.

monk's cress has edible flowers and leaves, but it's more of a kitchen herb than a proper ingredient in a meal. it has a pleasant peppery sharpness and the petals are very tender and feel almost silky.
other than that i've only had elderberry flower syrup. it's an ok syrup, but about as close to eating flowers as marzipan, because there's some rose water in marzipan.
flowery scents in desserts have unfortunately fallen out of fashion since flower scented soaps and cleaning products went into mass production and everyone started associating them with cheap artificial smelling soaps rather than expensive fragrant treats.
it's a small miracle that citrus scents have maintained their culinary foothold despite also being the most widespread toilet cleaner scent.

I grew monk’s cress once (here they call it nasturtium) but never tried eating it, I should grow it again
