What are your best wok cooking techniques and dishes?

I've gotten really into szechuan wok cooking recently (as a white boy) and I've been obsessed with making qing jiao rou si and am constantly tweaking the recipe with the different catalysts I use. Today I'm going to use doubanjiang instead of chicken boullion for my marinade.
>>
I like making fried noodles in the wok because it is easy to flip the whole thing in one toss

What oil did you use? I see the chinese dudes on youtube switch between vegetable oil and lard
>>
>>22245891
I use vegetable oil because that's what I have right now but I think it would be fine with anything

Do you two think it would be okay to use sesame oil?
>>

Most sesame oil that yiu can get otc has a low smoke point and will start burning. Also, I find sesame flavor over powers a dish.
>>
I typically hold a chinaman at gunpoint. The mental pain he feels enhances the flavor.

what the other guy said, it will burn and even if it doesn't the sesame flavor will be too strong. I drizzle a little on top when the noodles are done cooking but really they're already pretty oily from being fried

sesame oil goes at the end for the flavor
you can use sesame paste/tahini to build bases for simmering and sauces though, goes pretty well with doubanjiang and other fermented and/or spicy things

literally just made this btw, two packs of top ramen undercooked and fried with light soy, dark soy, doubanjiang, a little sugar, and scallions added at the end

I've used sesame oil in marinade and I swear it enhances the flavor even after cooking. I made it without it in the marinade and it didn't taste as good but it could have been another factor

Do you boil the noodles seperately then add it to the wok? I'm about to try it with lo mein
>>

>I've used sesame oil in marinade
true, I even did the same yesterday to make some char siu and I forgot about it lel
Point is it's just not really for frying in general
>>
>>22246013
Okay, good to know since I've seen the chad himself chef wang do it
this is the recipe I was talking about in the op if anyone's interested, it's fucking addicting: https://www.youtube.com/watch?v=wn0_7SMpw6o

Okay, thanks anons.
>>
>>22246008
yeah i boil for a minute less than the package says and then fry them 2-3 minutes on each side in the wok then add the sauce and scallions. there are probably better ways to do this but it works for me.
>>
>>22246068
Cool that's what I was gonna do, thanks!

Can someone tell me what technique I’m supposed to learn from this? He didn’t even make fried rice once
>>
>>22245925
Obviously not lmao

Use a cooking oil.
Sesame oil isn’t a cooking oil.
