So, carbon steel is just cast iron but you can actually wash it and it's not heavy?
>>
>>22248339
No it's worse.
>>
>>22248339
Depends on how thick the pan is. Carbon steel can be seasoned like cast. Cast iron is very brittle and will happily break if you drop it on a hard surface. Carbon steel is not brittle in the slightest.

If you want a multi generational purchase get darto carbon steel. The pans are stamped from a single piece of steel. No rivets to fail and the pan is virtually indestructible.
>>
I got a carbon steel pan as a gift but can't seem to season it, so I assume it's some sort of fake

tried coating it in rapeseed oil and then an hour in the oven but that didn't work
>>
>>22248378
Look up the potato trick or use the chinese method.
>>
>>22248339
>actually wash it and it's not heavy?
you're suppose to heat treat it like a wok and only wipe it with hotwater or mild soapwater to keep that heated black coating.
>>
>>22248378
probably normal steel or they already put a non-stick coating on top.
>>
>>22248356
Not OP but thanks for the rec, I’m pleasantly surprised that the prices aren’t astronomical
>>
>>22248356
Any reason to get a carbon steel over a stainless steel all clad?
>>
>>22248356
>If you want a multi generational purchase
what if i am the end of my line?
>>
>If you want a multi generational purchase get a sharto

the quantity of absolute retardation i read on this board never fails to disappoint

You trolling m8?
>>

They are nice pans. I have a couple i use fairly often.
The handles are pretty uncomfortable out of the box, but you can very easily file the corners down a little to make them less sharp or just use a towel. Maybe the newer ones are nicer. Ive had mine for a few years.

>>22248466
It's a single piece of thick carbon steel. It's obviously going to last forever.

Why the hole? Seems like it would just make it weaker.
>>
>>22248356
Who is dropping their Pans on the ground? Can you please raise your hands. I've been alive 36 years and never been close to doing that, or ever seen anyone do it. Who is this anon kek
>>
>>22248482
Reduces heat transfer to the handle and keeps hot liquid from being able to travel down towards you if you tilt too far.

Over the last week, I have purchased...
>Factory seconds 12qt All Clad D5 stockpot
>Factory seconds 4qt All Clad Risotto pan
>De Buyer 11" Mineral B Pro carbon steel fry pan
>Vintage Havard tinned copper 9.25' saute pan (60 bucks)
>Vintage Atelier du Cuivre 4.75" 3mm tinned copper sauce pan (100 bucks)
>650ish bucks for all of it
Now it's just a new saute pan and I am good for forever. Probably going to get a Ruffoni Historia or Mauviel Tradition.

These guys are retarded, you can wash cast iron or carbon steel with dish detergent. It doesn’t damage the seasoning. Only lye based soap does.
>>
I fell for that meme and tried to season it. got a seemingly decent season on it but then it started flaking off almost immediately so I sold it. just gonna stick to stainless steel

Id be more worried about breaking the tiles when dropping a cast iron pan lol
>>
>>22248929
Haha exactly, now that would be the disaster.
>Oh no I have to spend another £40 for a cast iron for the rest of my live. These tiles don't look too good, I'll just wear slippers in the kitchen from now on, no biggie

It weighs a ton. You could easily beat your wife to death with it.

Your secondary market must be pretty good to find copper pieces like that. I have a set of 2mm tinned copper pieces. 2 sauce pots, a stewpot, and a skillet. I want a sauciere, and to upgrade my stainless saute pan to something bonded hi-temp, maybe a rondeau instead.

I had thought about getting a carbon steel pan, but what for? I have two well seasoned cast iron pans I use for high-temp searing, everything else id use the copper pan. If anything id buy a big non-stick for frying fish, omelettes, or dumplings. And don't say carbon steel can be non-stick, I can make do in any one of my pans with the right temperature control, seasoning and oil, it's just convenience. I make crepes in my tinned copper pan right now, it's not much more difficult than with a non-stick.
>>
>>22249435
Tards off ebay. Times are tough lol. Probably going to buy tinned or stainless copper for everything except pots moving forward.
>>
>>22249435
>And don't say carbon steel can be non-stick
You still need no correct temperature with carbon steel. Personally is use CS as i own no cast iron. I still mostly use copper though.
>>
>>22249139
What? Why would you beat your wife, let alone to the death and with a pan- cast iron or otherwise?
>>
>>22249575
It's an optional feature
>>
>>22248339
you can wash cast iron.
>not heavy
If you think cast iron is heavy you'll probably still think carbon steel is heavy.
>>
>>22249567
Copper is so nice to use for anything except hard searing meats
>>
>>22248574
clever
>>
>>22249872
Never used copper before, what makes it so nice?
>>
I don't really get what sets expensive carbon steel and cheaper stuff apart. Aren't they just cutting/hammering/pressing out pans from sheet metal? Its not like multi-ply alloy core yadayada stainless pans or cast iron where you're paying for a better finished surface.
>>
>>22248339
The main downside of carbon steel in my experience is that the bottom tends to warp and eventually bowl out.
Not a problem on a gas stove but on an electric stove it'll lead to non-optimal heat transfer.
YMMV depending on maker though.
>>
>>22249935
It's very temperature reactive. Gets hot pretty fast and evenly but also cools down very fast. Perfect if you need different temperatures in the same pan. Especially good for sauces.
Just buy a used one and try yourself. I strongly suggest pans with stainless steel lining over shitty tinned ones.
>>
>>22248486
I used to have a roommate who did that all the time but he was a retard. He's the only person I know IRL who identifies as a communist. I kicked him out when he sold some of my power tools for a PS5.
>>
>>22248455
Multigenerational means it's something you'd pass down to your kids, so you dying is actually part of it.
>>
>>22250824
Sometimes I wonder why some people are allowed to live. Should've kiled him
>>
>>22250824
>>22251244
this is one of those petty crimes that in the grand scheme of things aren't particularly harmful, but they indicate you are literally unfit to live in society. like, what are you going to do? execute someone over stealing some power tools? but at the same time, it's such an insane and anti-social thing to do, there's no way the person who'd do it isn't actively harming the fabric of society with his existence.
>>
>>22248339
Yeah
>>
>>22248452
food sticks to stainless steel
>>
>>22253324
food also sticks to carbon steel
>>
>>22248378
Skill issue unironically, you're either not using enough oil or not getting a good enough sear on whatever it is you're cooking in it
>>
I like mine but I see where you're coming from. Just keep cooking with it, keep seasoning it and one day you'll get that black sheen you see all the pros using.
