Shredded lettuce wilts quickly, which makes it taste bad. It's fine if it is freshly shredded and you eat the burger soon after the lettuce is placed on it. Often, it was shredded in the morning, placed in a large vat, stored in the freezer, and brought out to the production line throughout the day. Then it's placed on a hot patty and left to rot under heat lamps or a warming chamber. By the time you get the burger, the lettuce's integrity has been compromised.
