Experimented with something tonight and while I would not call it a success, it's also not a failure. I think I'm onto something here. Much more experimentation is needed.

You know those dehydrated onions McDonald's uses on its smaller burgers? I partially rehydrated them in water and then finished the rehydration in boiling butter. The idea was that this would make a flavored butter topping for steak.

I used unsalted butter. This turned out to be the wrong choice. Also I can taste to much of the water and I think I used too much of the onions. Next time I will try using salted butter, less onions, and less water.

That is all.

You've discovered how to make compound butter congrats OP
>>
Green onion would be a better choice for something like this.
>>

compound onion, more like. This is not the same. The idea is to saturate the onion with the butter, not the butter with the onion.
>>
butter is 20% water
>>
>>22266894
You have it backwards. Water is 20% butter

I think you're going to end up at onion jam

First, you can Google onion butter, it's already a thing. Second, if you're bound and determined to do it with dehydrated onions then don't use any water, just go with butter, and if it needs more liquid to completely rehydrate then think about a splash of stock. Finally, using unsalted butter for what you did is silly.

Yummed Up.

It is wise to rehydrate anything with a flavorful liquid rather than water. Unsalted butter is hypothetically better for this application (fresher flavor due to shorter shelf life). But you have to add salt.

I googled onion butter and this thread was the only result

Onions are super cheap. There is no reason for this.

Onions come presaturated with water. Dehydrated ones do not. It would be way more work to first mince and then dehydrate a bunch of onions than it is to just use my stock of already minded and dehydrated onions.

Waste of a perfectly good steak
>>
>>22267560
That is not "perfectly good" steak. It's from a thin, $7 cut of tough choice top round for experimentation purposes. Even if it weren't, how could it possibly be a waste if it's eaten?
>>
can't you just cook real onions in butter? that whole thing sounds convoluted.
>>
>>22266868
Maybe you could try making a buttercream frosting but with onion powder. Good luck, op, I wish you a speedy gastronomic breakthrough.

This simply isn't true there is no water content in butter. You're thinking of margerine.

OK! Update on the experiment. Making good progress. This is definitely something to continue to explore.

The dehydrated onions were submerged in melted butter (salted) and left for a few hours to to become plump with butter.

The steak was more of that $7 cut of top round, seasoned with pepper, sazon and a little kosher salt. Quickly seared in avocado oil on both sides.

Spooned up some of the onion topping and drizzled it across the top.

Very nice like this. Very mild onion flavor and it has that nice soft crunch to it that you'd expect from little soggy onions. Really nice, creamy butter bursts out of the onions with every bite. Very savory with that nice mild oniony flavor to go along with it. On the last bite of the steak, I loaded up a bunch of the butter onions onto it. Very yummy.

Thing is, this was spooned up from a glass of melted butter with the onions at the bottom so naturally a lot of liquid butter came up with it in the spoon. I want as much of the butter as possible to come only out of the onions as you chew. So next time the onions will be strained and possibly patted dry as part of the prep.

Since butter is mostly fat, it should be able to deep fry the fully saturated onions if simmered for a while. Curious to see if these will become crispy after doing so in the butter bath. Next experiment will see if I can get a nice crispy onion topping that bursts out butter as you chew.

It's just a steak with fried onions. I'm worried that your onion project has sent you mad.

I'll never knock a $7 pack of meat again. I beat it with my fists to get it nice and tender and fished up the experiment.

So, frying the onions to get them crispy is not the way to go. It winds up destroying everything and giving you a lightly oniony butter mash.

Definitely want to keep the onions as close to "raw" as possible, while having them full saturated with butter. Gives a very nice texture when you crunch into them and have them burst with buttery goodness.

Delicious dinner though.
