I know over cooking liver is bloody awful for taste, but at the same time I know that pork really shouldn't be undercooked. Does anyone have experience with this? Am I overworrying about how long to cook it?
>eating liverjesus christ, is it really that bad for some people?
>>22271034When in doubt, slow cook it
>>22271055Lambs kidneys are great and the liver is nice. I don't see why pigs liver would be different.
>>22271055Liver is the best part of the animal. Carnivorous pack animals always reserve it for the alpha.

>>22271056Yeah this might be what I end up doing tbf.
>>22271034slice, bread and deep fry for what it's worth, my mom always overcooked liver when she was feeling too lazy to go through the whole breading station procedure. i think she just covered it in flour or just in breadcrumbs (they adhere somewhat to it, because it's kind of wet) and then fry it like that. it does get tough but sometimes the edges are nice and crispy and the taste is also fine.

>>22271034I wouldn't worry about it. I used to eat raw pork liver all the time until the shitbirds in the Tokyo gov't decided to ban its sale at izakaya. It's good.
>>22271034I like my meats pretty rare but the texture of raw liver is awfuland it almost feels like it has no tasteso go for medium at least

you can eat pork liver? Only ever knew about chicken and beef
>>22271517you can eat anything you want
>>22271517Lambs liver is much milder, if you are a newbie.Depending on the size of the slices, cook it medium to medium/well. Like most meats if you overcook it past well done, it gets a little tough but it still tastes OK.When I was at school they used to serve liver rolled in oatmeal but it was always overdone. It's not as bad as you think.

>>22271331>>22271575Thanks guys. Yeah I think medium/well is the safe bet on this one. Going to cook it tonight :D
I cook it on medium to high heat in olive oil/butter for 20-30 seconds a side if it's 1-2cm thick. Take em out, cook a lot of onions in the pan and when the onions have softened and start caramelizing I put the liver back in the pan, put the heat on low and put some butter and soy sauce and let it cook for 5 mins.
