I want to try duck. Never had it. I don't think I could do rabbit, I'd feel too bad. I've also heard it's pretty greasy.
Eating a squirrel just sounds hillbilly as fuck and I'm not interested.

Rabbit? Whatever retard told you that has never actually had rabbit. Its leanness is so infamous that there's a disease named after it called rabbit starvation wherein if you eat a diet featuring rabbit in extreme quantities and no fat sources, you will feel full but still exhibit starvation symptoms because of the large number of fat-soluble nutrients that can't be absorbed without dietary fat.

For rabbits and squirrels, you skin them, chop their legs and head off, give them a very quick sear then finish cooking them in a gravy. They're extremely lean so they get tough and stringy if you overcook them. Cooking them in a gravy helps prevent this, and the oil in the gravy is critical for properly digesting the lean meat. There's a condition called "rabbit starvation" that caused by eating a diet of lean meat. There's theoretically lots of calories and amino acids in their meat but your body can't make use of it without oil or fat that squirrels and rabbit don't have.

Duck is 100% dark meat. It's a bit of a bitch to cook. Needs a higher temp, hence why it lends itself well to Asian roasting methods. I've tried smoking it, that was a hard fail - dry and bleh.

I'd recommend either a proper fancy Chinese place or a Thai place if you have them nearby. Thai will be cheaper, the fancy Chinese will taste better. Thai tends to have stuff like honey duck - shit is pretty darn good. Chinese has Peking duck and usually it comes with rice buns and some brown sauce. Very good, but will run $$.

Confit works too. I had it confit somewhere once, damn it was good.

Duck breast will be a layer of dark meat, a layer of fat, and a layer of skin. The meat will have little intramuscular fat. So it has to be cooked right, or it will be dry leather. Asians have it down pat, hence why I recommend trying them out first. Never been gamey from an Asian place.

Hmm, peking or honey duck is pretty good, but yeah I can't say it beats out a proper teriyaki chicken. Teriyaki chicken just fucking slaps so hard it's hard for anything else to come close. Even teriyaki beef is not as great. TC just nails it that hard.

I did have a confit duck leg and breast once that was phenomenal, but that was fine dining tier expensive. I might have replicated it once with sous vide, but that was forever ago, and duck is just too damned expensive compared to chicken. And chicken is so much easier to work with and cook dozens of ways.

Ducks are jerks so they are ok. Also, they are delicious.

What if they bred special ugly rabbits for eating?
