A fetish for de-escalation and anticlimax must be rough. It's very niche. Your best shot would be to write your own story and resolve every plot by edging a climax without ever reaching it, and you'd have to continuously make it look like excitement is about to be there, but never reach it. It's a tightrope walk that's incredibly difficult to pull off, maybe impossible to do by accident.
