Kind of a toss-up to be honest
Finn never really knew his parents but had the help of Jake to raise him up to be a good person.
Sure he to navigate the complex emotions of several women on his own throughout his teen years and probably came out of it scarred, but in the end he learned to love himself and find meaning through his love for adventure. And managed to land Huntress Wizard as a potential partner as a result.

Jax however did have parents but they raised him like shit and he never learned how to have basic empathy for others without conflating the idea with weakness or pain.
When he eventually ended up in the circus, his trauma was such a detriment to himself that it inevitably drove the few close friends he had to suicide.
He didn't learn his lesson though as he eventually pushed everyone else away with his attitude to avoid that pain again, and only when he realized that, he gave up and abstracted.

But considering these two backstories, I'd still say Finn had it the hardest. He had to save the world and his friends several times with or without Jake by his side all while learning how to let go of his deeper emotions in order to keep the land of Ooo safe, and he gave up several paths to happiness in the process just to do so.
Jax never had to suffer through anything other than his parents. He was essentially given another chance to change his life and find some meaning beyond his past but ended up falling into his old ways just to keep himself from hurt.

Im re-watching AT and legit i feel so bad for Finn, it's like every episode he gets a L. He only gets a W when he beats ice king or tha Lich.
