The maid in Tom & Jerry was never named "Mammy Two-Shoes". Marketing and production materials when the shorts were released did not give the character a name, referring to her as "the maid", "the housekeeper" or "the cook" and a few comic books and storybooks named her Dinah or Rose but these names were not used outside of said books. The name "Mammy Two-Shoes" actually refers to a similar character also voiced by Lillian Randolph who appeared in a few Disney shorts and appears to have been first associated with the T&J character from a 1975 interview with Mark Kausler. Kausler to his credit has apologized since then and has attempted to correct the record

Uncle Tom is used as an insult because he;
1. Takes care of a sick little white girl at one of the families that buys him, who becomes a source of hope for him after her death
2. After Tom encourages another slave to escape, the sadistic slave owner on his last farm orders two of his overseers to beat him to death. As he is dying he keeps his christian faith intact, instead of succumbing to despair, and forgives the overseers, who gets inspired by his faith and becomes devout Christians themselves.
This is all ignoring the fact that he encourages other slaves to escape, refuses to whip and beat his fellow slaves, and constantly tries to comfort his fellow slaves as best he can, and refuses to betray his family and friends, or give up his faith, despite being beaten for all of these.
It's basically a story about a good man who is constantly dealt a bad hand, but never give up hope, and inspires the people around him to be better.
