You are probably best off just watching What's New and then watching Mystery Inc. What's New is very much the classic formula, and Mystery Inc has a continuous story.

Pic any one. They're basically in their own continuities anyway.
You want to see the classic watch the classics. You want to see something darker or dramaslop, watch Zombie Island or Mystery Incorporated.
That's not even getting into the dozens of spinoffs and movies.

What's new is classic, Mystery Inc is a serialized storyline.
That said, a pup named scooby is a cute 90s cartoon and worth a watch. And don't understimate Be Cool just for the ugly artstyle, it's a fairly good comedy too.

I'd love another movie with a similar tone to Zombie Island, it'd sell well and with the upcoming anime series featuring real yokai (seemingly) it seems WB might allow for real monsters again
