Ignoring anything post Rebels save for TCW S7 and using the old EU to fill in gaps, TCW and Rebels aren't straight depictions of actual events. TCW is a relatively accurate retelling from Ahsoka's pov. That means that everything in it happened relatively closely but the way various people are depicted is warped by her perception. Ie she romanticizes Anakin because she didn't notice his issues until later and he tried to show her the best side of himself. Same with how moral and affable the clones were. On the other hand Dooku and Grievous were cartoon villains because she mostly heard about them second hand from Anakin and Obi Wan or didn't get to know them. Rebels is a piece of in universe entertainment made as New Republic propaganda. Rex was incredibly similar to Saw Gerrera, Kanaan had alcoholism, and Ezra was much closer to falling to the darkside. Sabine and Zeb were almost nothing like how they were depicted in the show. Ezra never fought Vader. The edges were sanded down specifically because it was meant for kids in universe and depicting national heroes as actual militants with issues would be problematic.
