I read it less like she LOVED the doll specifically and more like the doll's mere presence stuck with her enough that the name "Jessie" became a favorite name of hers.

I didn't see a husband though, so Emily most likely wound up as a single mother. Kids do stupid things, parents steal toys all the time because they think they are always right. Emily still remembered all the fun times she had with Jessie and maybe has some of the comics or books or something. There are girls in real life who had good memories with Barbie and Ken and Bratz dolls, but their parents stole their toys to donate.
