I don't see the issue, outside of the whole magic thing, unless he becomes Superman levels later. Odin is the one who could actually kill Superman easily (before Jack Kirby left)

60s Thor and 60s Superman are pretty comparable in feats and abilities, but 70s Thor was a lot more grounded than 70s Superman is for the most part.

On the flip-side 80s Thor is overall depicted as stronger than 80s Superman, especially Post-Crisis, and then it basically balances out afterwards. But I think Aaron Thor and any version that has the power of Odin is depicted a lot stronger than Superman is.

Current Thor pre-death is cosmic in his own book and then has to job everywhere else because otherwise he'd obviously solve every issue the Avengers have easily. There's an issue of the Cates run where Thor one-shots the villain all the Avengers are struggling with which kind of lampshades this.

Odin is superior to someone like Mephisto, and typically regarded as higher than most cosmic entities when he's fully powered. Full powered Odin is probably on par with a well-fed Galactus, who can take 3 or 4 Celestials at a time. Below Eternity, Living Tribunal, Shuma Gorath, and The Beyonders though.

Celestial scaling is fucky because how strong the writers imagine them to be has varied wildly. Odin amped up as much as feasibly possible could barely even phase them back in Thor 300 near their debut, but then in modern comics Knull was a threat to them and Thor was on-par with him. But then that same Thor literally got one-shot by a Celestial during AXE.

The way I've seen it explained is that Celestials serve different purposes, and some are stronger than others. Something like Exitar being 50x the size of Arishem for instance.

Classic Odin scaled to just under Galactus, not current jobber Galactus, but classic Galactus that was on par with Eternity when well fed, and sometimes was depicted as being boundless. He had a fight with an Elder God that threatened to destroy the multiverse. He could rewrite reality, turn back time, create life, create pocket universes, etc. without effort. He gradually got scaled down in terms of power as he started having more agency in the plot because you couldn't just have someone with infinite power not solve everything in 1 second without making the story feel contrived. Usually, the way they scaled him down was with the Odinsleep, since he needed to go on long periods of rest to rejuvenate his power, and sometimes he couldn't help because he was too tired and needed to rest, or was not at full power. After he returned from his death in Jurgen's Thor run, he was severely downscaled. I think Cates, or Aaron, said that the reason why he was so weak post returning was that he was never meant to come back and that he was using the Odinforce to keep himself alive basically, and had barely any of it left. But modern Odin is not depicted anywhere near as strong as his classic version. He had to prepare all of Asgard for war to destroy the Earth in Fear Itself, when destroying a planet should be something trivial to him. He fought evenly with Jane-Foster Thor, who should only be as strong as normal Thor, and while he was winning, it was a close fight. He got low-diffed by a hungry Galactus despite having tons of prep time against him, when classic Odin should have been evenly matched with him. He needed Iron Man's help to fight Malekith, despite still having the Odin Force. I could go on, but basically he went from Elder God-Abstract/omniversal level to maybe Galaxy level at most in modern depictions, but at least it was kinda explained in that the Odinforce was starting to reject him.
