Economics.

When you have an established audience to a property then you do not really need to ensure that the product is good for its next iteration. People will buy it anyway. You will still make money. You can cut costs, produce something that is just 'good enough' and maximize your profits. You are incentivized to 'cash-in' on your property once you think the popularity is peaked.

So obviously you're going to see a lot of series that just end with cash-ins. Noone during the production of those final movies had any intention of making a movie after that iteration.
