I'll do the best I can to explain it. I can't speak for everyone though.
Here's the thing: you don't ever truly stop liking something just because you get older. There have been bad games but that doesn't suddenly make everything of Sonic terrible. To this day I would consider myself a big fan, I still pay attention for anything new coming out, I watch the shows, read the comics, buy figures and statues etc.
Sonic has always been a good marketing property and it shows how many people watched the sonic movies. People don't hate Sonic, they hate the company that made bad calls.
But to answer the question why so many people love Sonic is because his entire franchise behind himself, other characters and lore is so ambiguous and vague there's a lot of imagination and speculation you can add into it. It was very vague about a lot of stuff that made people think about what was going on when playing the original games.
On the other side of things SEGA does not take any stances so it makes it harder to calm parts of the fan base down. This includes the people who have autism, political activists, religion, perverts, etc.
If Sonic would say something like "Free Palestine" in a trans flag colored shirt, that would make a good chunk of the fan base become disgusted but make the other fans worse. This is why the fans are so widely different. It's culture within it's own fan base. You only see the bad because on the Internet everything can be shown to you and you assume it's all bad like how I used to think everyone was a Twitter user outside but in actuality majority of people outside think Twitter people are insane and that goes for Sonic fans.
I'm 41, I'm at the age I don't really care what people think about me being a fan of something. I have never been rejected by a woman for my sonic or other collections I have. The only people who gave me shit was guys who thought they had to like what everyone else was liking.

Ehhhhhhhhhhhh. I can't say I revisit the really, really childish stuff I liked as a child all that often. I used to love Muppet Babies but I don't have any desire to go back to it. I definitely feel the same way about Sonic. It isn't like something like X-Men, which I liked when I was 10. But it also grew up a little and made some content that was decent enough to appeal to me as an adult. Sonic has pretty much the same. If anything, Sonic has aimed even younger and younger as its aged. Which is fine, not everything has to be aged up to appeal to me. I'm perfectly fine leaving Sonic in the past.

For myself I just enjoy the bits I like, like some people have this idea that being a fan of something is an all-or-nothing affair, which most people aren’t. That is fair, but would you really consider yourself a "Sonic fan"? The people I'm referring to are the ones who turn it into their lifestyles. They draw fan art, create stories of it, they keep up with new cartoons and games, they read the official comics for children. Why dedicate so much of your personality and identity to an IP for children well past your expiration date? There's a lot of people that lurk here that do it with other similar franchises as well (the dumb horse show, for example). I can see someone being perpetually stuck in the mind of a 13 year old. Arrested development is a thing. But an 7 year old? That's really concerning. Do people like that have the ability to take care of themselves or are they still being cared for by 60 year old parents who themselves are reaching the point of needing care? It's a sad thing to think about.

Well it does exist but as you said it isn’t as common as Sonic, why Sonic though? Because he appears in dramatic games and comics which in turn gives more avenues for people to write drama, whereas in Looney Tunes it’s all comedy shorts (unless it’s Loonatics Unleashed - but we don’t talk about that). Comedy is harder for people to write and ‘put themselves into’ for want of a better term, as such you have a larger Sonic fancontent crowd. However it’s not as though no-one is drawing slash art of Bugs and Daffy or making memes or comics out of Mickey Mouse, it just manifests itself differently for reasons I’ve explained.

Okay I’ll give you the benefit of the doubt and and try and answer the question:
Sonic the Hedgehog is a 35 year old franchise primarily aimed at boys aged 7-13 or thereabouts, it covers several media formats including games, comics and cartoons. The games are the primary format and generally lead the franchise, most of them are average but for the above demographic they’re fine and some of them are actually good and a few are pretty crap. Throughout those 35 years Sonic has kept up a fairly regular schedule of games and content which keeps people’s attention, this is in contrast to say Mega Man or Star Fox which fit a similar demographic. One of Sonic’s key strengths as a character is his strong visual design which combines anime and classic cartoon aesthetics; the original games having a world akin to Dragon Ball and Dr Slump starring an edgy Felix/Mickey. Story-wise the series veers either towards the younger or the older end of the demographic scale and as such has a sweet spot where it takes itself fairly seriously but isn’t too complex to understand, this means that people can treat the stories as a joke or take them really seriously and write insane fanfics about them. Going back to the character design, not only are they visually very distinct but are easy enough to draw for the average artist, they follow fairly consistent design rules and that allows people to make their own OC’s that look like they fit with the other characters, as opposed to someone making a Marvel OC who would need to design and draw a realistically proportioned humanoid character who could just as easily belong to DC or the million other franchises populated by human beings (this is also why you get a lot of OC’s for franchises feat. Non-humans like horse show). So to conclude:
